As a working woman, it’s hard to cook a lot of dishes at less time. Vegetable Pulav makes my task easy, as it includes vegetables and other healthy ingredients. It’s easy to cook and if you want to add other vegetables to it.
Ingredients for Vegetable Pulav:
Potatoes – 2
Carrots – 2
Green peas – 1/2 cup
Cauliflower (Gobi) – 1/4 cup
Mint leaves (Pudina)- 1 bunch
Cilantro (coriander leaves)- 1 bunch
Clarified butter (Ghee) – 1 tablespoon
Onion- 1 big
Curry leaves- 1 spring
Green chilly- 6
Tomatoes- 2 small
Cumin Seeds (Zeera) or Caraway Seeds (shah jeera)- ΒΌ teaspoon
Turmeric powder- a pinch
Salt- to taste
Ginger Garlic paste- 1 teaspoon
Cloves – 4
Cardamom (Elaichi) – 4
A pinch of cinnamon powder (or) 2 small cinnamon pieces
Basmati rice- 1 big cup (or 1/4th kg)
Procedure:
Cut the potatoes, carrots, and cauliflower in pieces and Presoak the basmati rice in 1 and a half cup water in rice cooker or in a separate pan at least 1 hour prior to preparing the below mixture.
Put the pan on stove and add butter. Once the butter melts, add Cumin Seeds/ Caraway Seeds, Cloves, Cardamom, Cinnamon. When they splutter, add sliced onions, green chilies, coriander, curry leaf and mint leaves. When they start to turn light brown, add ginger- garlic paste and close lid on sim flame. Let the ginger-garlic leave its raw smell. Wait utility starts turning light brown and the aroma smells good. Now add the chopped veggies, green peas and turmeric powder in it. Mix properly and cook on sim flame for 5 mins. Off the stove and add this whole mixture in the soaked rice. Mix properly, add salt as per taste. On the rice cooker and cook until done.
